Savory Mushroom Burgers

Savory Mushroom Burgers I'm always on the lookout for a great veggie burger. Most often, homemade patties use a combination of veggies, beans, grains, and spices (check out this earlier post featuring a uniquely delicious beet burger). This recipe from Love and Lemons caught my attention because it used a mixture of savory mushrooms rather than beans to provide meatiness. And this wasn't just cooking up a portobello and putting it on a bun. This was chopping up a mixture of your favorite mushrooms and allowing them to slowly cook and absorb the sweet, salty, spicy, tangy flavors of mirin rice [...]

Eggplant Mushroom Walnut “Meatballs”

Eggplant Mushroom Walnut "Meatballs" I love experimenting with different vegetarian meat alternatives. Most of the variations I've made contain some combination of legume, grain, veggies, spices, and often a binder such as a flax egg. While perusing my new Love and Lemons cookbook, I came across the rare "meatball" recipe that has no legumes. Check out her website for more great recipes! The primary ingredients are eggplant, mushroom, walnuts, and millet. Due to the moisture from the vegetables, no binder was needed! The result is a meaty, moist, well textured veggie ball that can be used to top pasta, be enjoyed by itself, [...]

Mushroom Walnut Taco “Meat”

Mushroom Walnut Taco "Meat" As you can probably tell by now, my family loves tacos. Check out some of my previous taco recipes including Cauliflower Oyster Mushroom Tacos and Tempeh Tacos and Fajitas.  This recipe is flavored more like traditional taco meat. A base of cooked chopped mushrooms and walnuts provides a meaty texture. Allowing this combination to simmer with tomato, cilantro, minced red onion, and spices provides that indistinguishable taco meat taste. It's healthy, quick, easy to make, and one of my favorite handheld comfort foods! Top your tortilla with some avocado and tomato and you've got the perfect meal for [...]

Vegan Mushroom Stroganoff

Vegan Mushroom Stroganoff While mushroom stroganoff might not be the first thing that comes to mind as a vegan dish for a Thanksgiving dinner, it actually is a meaty, flavorful entree with many of the traditional Thanksgiving flavors. The base of this recipe is a creamy mushroom-based broth similar to what we might see in a traditional green bean casserole. The dish also contains many of the familiar herbs that we associate with turkey and stuffing, such as thyme, sage, and parsley. While the original recipe calls for dried herbs, I opted for the fresh variety for the holiday [...]
